Happy Canadian Thanksgiving

So my husbands family is all from Canada and Jared wanted to celebrate in some way but wanted to keep it simple and easy so we could still go to Cornbellys for our family home evening activity. So he searched online for some ideas and found this delicious meal and it was so easy I loved it!
Here was our lovely FHE/Canadian Thanksgiving meal.


What you need
1 box of stuffing
sliced turkey ( we got ours from Maceys service deli)
1 to 2 pkgs chicken gravy (depending on how much sauce you like)


Cook the stuffing as directed on the box.
Cook your gravy as directed on packet then set aside.
Then you need to grease the pan.
Next grab a slice of turkey and start putting some stuffing inside of it and roll it up like an enchilada and place it in the pan.
And repeat until the pan is full
 Then pour gravy over turky rolls and place in oven for 20 minutes at 350 Degrees
Serve with potatoes, salad and rolls.






Calzones


The hubs and I had some opened hunts spaghetti sauce and had extra pizza crust so my we had the brilliant idea to have calzones!
Jared is an amazing cook, and like I've said in a few posts he is extremely busy!
He was able to tare himself away from school work and make this delicious dinner.
Here is our version of calzones.



What you need..



It was a use what we have in the fridge kind of night.. 

(These are all approximations and you can get what you think is the right amount for you but I will give you the amounts I used)

What you need:
1 Pillsbury pizza crust (the one that pops when you open it, scares me every time haha)
1 pkg Pepperoni
Approx. 2 slices Ham
7 slices Bacon
2 C cheddar or mozzarella Cheese 
1 can Hunts spaghetti sauce (traditional)
1 can Pineapple
Parmesan Cheese
Pepper to taste

The first calzone had
Spaghetti sauce, pineapple, and lots of cheese pepperoni and a little bacon.

The second calzone had everything on it.
(My husband loves to add a bunch of things to his meals.)

So you have probably gathered that you can create your perfect calzone with whatever ingredients you want. I for one enjoy simple but Jared will experiment.


Then lastly place your calzones on the middle rack in the oven at 400 Degrees for 15 to 20 minutes.



Cut up both bacon and ham.

 Heat oven to 400 degrees.

Cut the dough to desired size.
(We were completely experimenting with this!
It doesn't look fancy but tasted delicious!)





Then the messy part is to fold it over and we added cheese to the top.

Chicken Enchiladas

So this meal is a request from my husband. I made it when we were first married and it took me a year to make it again and it was a success he loved it! In our recipie we didn't add olives, the hubs does not like them.I thought since I made it for him it's only fair I take them out.

Most of the meals I make should feed a family of 4. My husband and I end up with lots of leftovers for lunches.



4 chicken breasts, cooked and chopped into pieces
2 cans cream of chicken soup
1(4oz) can diced green chilies
1(3oz) can olives (sliced or chopped)
1 pt sour cream
2 cups shreddred monterey jack cheese 
2 cups shredded cheddar cheese
1 pkg flour tortillas

9X13 pan

Mix soup, chilies, olives, sour cream, and Monterey Jack cheese. Desperate four cups of mixture and mix with the chopped chicken. Fill the tortillas with chicken mixture. Pour remaining soup mixture on top ad top with grated cheddar cheese. Bake 350° for 40 minutes.


Note to self boil chicken instead..
I don't know if it was just because i'm pregnant that the smell of the chicken disgusted me and after that the chicken tasted awful to me.. I do not know!
My husband liked the enchiladas but i'd rather it have been boiled and shredded!

Chocolate shake





I have had many craving while being pregnant and for a couple weeks I wanted a chocolate shake every night  after going to my in laws. My fatehr in law made a chocolate shake and a week later it's all I could think about haha. So I figrured why not save some money and make my own.
I looked in my fridge/freezer/cupboards to see what ingrediants I might have to make one.
I had chocolate syrup and milk. I LOVE thick shakes so i needed ice cream.

What you need:
Vanilla ice cream
Milk 
Chocolate syrup


Add 3 cups of vanilla ice cream to a blender 1 Cup milk and 1/2 cup chocolate syrup and mix.
(if you like less chocolate you can add 1/3, or if you like more add 3/4, for a thicker shake add more ice cream Or less milk.)Let blender run until mixed.
There it is, my pregnancy craving made cheaper!

Crock pot Hawiian BBQ Chicken

 What you need:
-4 Chicken breasts (or 5 Chicken Thighs, I used what I had in the freezer)
-Target brand Sweet Pineapple
-1 20oz can of pineapple

Put everything in the crockpot for either 2 1/2 hours on high (checking every 45 minutes to see if it's done)
or 5-6 hours on low

Creamy Chicken With Rice

This dinner was alright.
In the future I will be making some tweaks so here are the tweaks i'd make so you can enjoy it more then my husband and I did.

- 1 onion finely chopped(original recipe has it in large pieces)
- 4-5 chicken breasts( I used 5 thighs)
-2/3rds of a bag of frozen corn
- 1 can cream of chicken soup
- 1 bag of shredded chedder cheese
- 1 box of yellow rice

So I love the taste of seasonings and this recipe needs something, If you know what it is please do tell!



I didn't take a final picture but for the next time I make it I will put that up!

Creamy Chicken Pasta

This is a recipe I tried from pinterest a while ago.
It has good flavor to it and a little spice from the green chilie tomatoes.
These are all ingrediants I had in my cupboard already so I whipped it up quick for a late dinner.

Need:
8 ounces pasta of choice(the regular recipe says angel hair but it doesn't matter)
2 cups chopped grilled chicken(or canned for quick and easy)
1 (10 3/4 oz) can cream of mushroom soup
1(10 3/4 oz) can cream of chicken soup
1 can (10 oz) of Diced tomatoes with green chilies undrained
8 ounces sour cream
Sprinkle mexican blend cheese on top.
Preheat Oven to 350
Boil Pasta as package directs and drain. Mix all ingrediants except the cheese together.
Add ingrediants to cooked pasta and put in 9x13 pan.
Cover with foil
Bake for 30 minutes or until hot and bubbly.
Then take out of the oven and sprinkle cheese ontop and return to oven until melted




I didn't have Mexican Blend so I just used this cheese.



I was very lazy and very hungry that night so I mixed it in the pan I was baking it in..


Not the greatest picture haha but it tastes delicious!!

I've made this 3 times and one of the times I made it, it did not have enough noodles
so make sure if your do more creamy to do more noodles!!
Or it will taste like a creamy spicy mess.

Lazy dinner ramen stir fry

One of my college friends introduced this to me. For those lazy days that you want more than just the same old same old this works perfectly
What you Need:
Preferred ramen flavor(I use chicken)
Preferred veggies
(I use carrots)
1 or 2 Eggs

How to:
Boil the noodles until done, then drain(don't add seasoning yet) then prepare your veggies for the stir fry I put my carrots in a bowl with some butter and put it in the microwave until soft, cook eggs add veggies to egg, or vice versa. Then add the noodles(it is better to have about 1/4 cup of water to keep it from getting too dry) Then add seasoning(for less sodium intake only add half the packet it taste just as good and is a bit healthier!) and there ya go. It's easy and quick.

Veggie Spaghetti

Need
1 yellow squash
1 zucchini
1 package 8 oz spaghetti
3 carrot sticks
(optional) 1 onion
1 jar or can of spaghetti sauce
(or homemade spaghettic sauce would be even better!)

Bring water to boil to cook spaghetti.

Cut onion and sauté to soften. (I only used half an onion) 
Then cut carrots, yellow squash, and zucchini, about 1 inch long
 Make sure all the insdes of the zucchini and squash are cleared out.
Add carrots to onions into pan
 If it is starting to get dry add water(small amounts) and use water as needed.
Then add the yellow squash and zucchini. Let cook until all are tender. Then add desired amount of spaghetti sauce.

There ya have it. Healthy and yummy!
